There are several food and lodging regulations that have been promulgated as formal Rules by the Vermont Department of Health, pursuant to Vermont law. (See Title 18, Chapter 85, Vermont Statutes Annotated)
- Good Manufacturing Practices for Food - food establishments that process food for human consumption, and provide processed food for sale and distribution to other business entities such as other food establishments. Requirements do not pertain to food establishments that process food solely under the regulatory oversight of the Vermont Agency of Agriculture, Food, & Markets.
- Food Service Establishments -
licensing of restaurants, fish markets, delicatessens, salvage food establishments, food processors, and bakeries that operate retail establishments where baked goods are prepared to be consumed on site or for retail sale.

- Lodging Establishments - licensing and inspection of hotels, motels, tourist homes, bed & breakfast establishments, etc.

- Shellfish Sanitation Program Rules - licensing and inspection of establishments processing and distributing molluscan shellfish.
